Keto Duck Pancakes

INGREDIENTS:

  • 3 Eggs

  • 1/3 cup Warm Water

  • 1/2 cup Tapioca Flour

  • 1 tsp Onion Powder

  • 1 tsp Sesame Oil

  • 2 1/2 Tbsp Coconut Flour

  • Coconut oil for frying

DIRECTIONS:

  1. Whisk the eggs with water, onion powder and sesame oil until slightly frothy - approx. 30sec.

  2. Add tapioca flour and whisk until dissolved.

  3. Then add coconut flour and whisk until combined.

  4. Heat the coconut oil over medium heat. Add the mixture into the pan and swirl the pan around so that the mix spreads into a thin pancake.

  5. Cook for approx. 60sec. and then flip the pancake and cook for a further 30sec.

  6. Repeat until all the batter is used.

Paleo Hoisin Sauce

INGREDIENTS:

  • 1 Orange

  • 2 Tbsp Almond Butter

  • 1 tsp Garlic, grated

  • 1 Tbsp Ginger, grated

  • 1 tsp Apple Cider Vinegar

  • 5 Tbsp Coconut Aminos or Tamari

  • 1/2 tsp Chinese Five Spice

  • 1 tsp Coconut Oil

  • 1/2 tsp Chilli Flakes

  • 1 tsp Tomato Paste

DIRECTIONS:

  1. Add all ingredients to a small saucepan or pot.

  2. Bring to a boil, whisk, and then reduce heat.

  3. Allow to simmer for 5 minutes, stirring frequently.

  4. Remove when mixture thickens and darkens.

Coronation Chicken

INGREDIENTS:

  • 1 medium Onion, peeled and chopped

  • 2 Tbsp Coconut Oil

  • 30ml Water

  • 2 Tbsp Mild Curry Powder

  • 4 Tbsp Mango Chutney

  • 1 tsp Tomato Purée

  • 250ml Mayonnaise

  • 250ml Greek Yoghurt

  • 1 Cooked Chicken, Shredded

DIRECTIONS:

  1. Sauté the onion in the oil without colouring - approx. 10 minutes.

  2. Add water and boil to reduce by half.

  3. Add the mango chutney and tomato purée. Cook over a low heat for 5-8 minutes, stirring occasionally. Allow to cool.

  4. Combine the curry sauce with the mayonnaise and yoghurt. Use enough sauce to coat the chicken generously.

  5. Serve with salad leaves and garnish with herbs, grapes, and / or almonds.

Waffles

INGREDIENTS:

  • 1 large Egg, separated

  • 1/4 cup Cashew Flour

  • 1/4 cup Hazelnut Flour

  • 1 Tbsp Stevia

  • 1/2 tsp Baking Powder

  • 1/4 tsp Sea Salt

  • 2 Tbsp Butter

  • 2 Tbsp Cashew Butter

  • 1/4 cup Coconut Milk

  • 1/2 tsp Vanilla Extract

DIRECTIONS:

  1. Beat the egg white until stiff. Set aside.

  2. Combine flour, stevia, baking powder, and salt. Set aside.

  3. Melt and whisk together the butter and cashew butter. Then add to the dry mixture from step 2.

  4. Add the egg yolk, milk, and vanilla. Stir until smooth.

  5. Fold the egg whites into the batter. Be careful not to over fold to keep the batter light and fluffy.

  6. Cook the batter in a waffle iron, about 5 minutes for each waffle or until done. Waffles will crisp up as they go from hot to warm.

  7. Serve with a side of protein.

Cashew Satay Sauce

INGREDIENTS:

  • 1/2 Small Bunch of Fresh Coriander

  • 1 Fresh Red Chili

  • 1/2 of a Clove of Garlic

  • 3 Tbsp of Cashew Nut Butter

  • Splash of Coconut Aminos

  • 2 cm Piece of Fresh Ginger

  • 2 Limes

  • Splash of Water

DIRECTIONS:

  1. Put the coriander (stalks and all) into the food processor with the chili (stalk removed), peeled garlic, cashew butter, and coconut aminos.

  2. Peel and add the roughly chopped the ginger.

  3. Finely grate in the zest of both limes and add in the juice from one of them.

  4. Add a couple of splashes of water and mix into a spoon-able paste. Season to taste.

  5. I served this with roast chicken and it was amazing!
